I am head over heels in love with their cakes. I’ve found that gluten free chocolate cake is particularly difficult to get right, but Antonella is a master baker and makes all of my GF cake dreams come true. Kris and I devoured it. I’m eyeing the Coconut Layer Cake and the Lemon & Berries Cake for my next special occasion.

The Squirrel & The Bee Grain Free Bakery + Bonus Giveaway

One of my friends recently told me about a bakery that was featured at a farmers market in New Jersey that had the best paleo/gluten free snacks. I instantly asked, “Is it The Squirrel & The Bee????” – “YES!” And we had a love fest chatting about their delicious granola and muffins.

The Squirrel and the Bee is a 100% gluten free bakery in New Jersey. They offer a wide variety of muffins, breads, sandwich rolls, cakes, cupcakes, cookies, brownies, tarts, pies and even ice cream cake. All of their items are gluten free and grain free. Much of their menu is also dairy free, vegan and suitable for the paleo diet. 

My favorite product (so far) from their bakery are the pumpkin and blueberry muffins – when I’m out all day teaching fitness classes, it’s a snack that I can feel good about. The base of nut flour and coconut flour helps keep me fueled and satisfied for several hours. I appreciate the focus on nutrition, high protein, and healthy fat.

They also make THE BEST granola that I have ever tasted – Goodness Grainless Granola. I’ve tried both the Pumpkin Spice (perfect for fall!) and Vanilla & Cinnamon. While I could happily munch on fistfuls straight out of the bag, I highly recommend both flavors as the perfect crunchy ice cream topping – they’re excellent on top of coffee ice cream!

Gluten Free Prairie Review & Giveaway

Lucky me! – I got to try their new Gluten Free Brownie mix! These were some of the best, chewiest brownies I’ve ever tasted. I admit that I ate more in one sitting that I should have, but an extra wonderful thing was that they didn’t feel heavy in my stomach. The oat flour was equally as splendid and made delicious pancakes and crepes. Sure, I like pasta, but I prefer to have protein as the main component of my meal, along with vegetables. I hear your questions already – “What’s the texture like? Does it taste like chickpeas?” No, it tastes like pasta. As one would expect, because of its unique ingredients Banza does have a slightly different texture than wheat-based noodles, but I don’t mind. I would so much rather have the protein than junky carbs.

What I love about the book:

  • It is visually stunning. Flipping through the pages you’ll be transported to a rustic country house. Just looking at the pictures makes me feel incredibly relaxed and at peace. 
  • The recipes are very healthy and include lots of fresh produce. Even traditional desserts like apple tarts are made with healthier ingredients like almond flour and natural sugars.
  • All of the recipes are made with REAL food. No crazy fillers or junk items. Just nutritious food.
  • The book has a very personal flair – as if Danielle is a friend and made this book just for you.
  • It includes a list of handy pantry staples and recommended kitchen equipment.
  • The recipes are easy to follow and most recipes have a “Quick Tips” section to help you along. Cooking/baking healthy recipes from scratch does not have to be hard!

I dived into the book and immediately baked the gluten/grain free Cheese Crackers. Made with almond and tapioca flours, I agree with Danielle when she wrote they are “crazy addictive”. She warns you that even thought the crackers have a shelf life of 14+ days, they will definitely be eaten much faster. Kris and I love them, and I’ve already baked them several times. And they are incredibly easy to make! I’m never buying store bought crackers again.

I can’t wait to cook my way through the entire book.

Not only is the flavor of every product top notch, but the texture is also amazing. Each mix is very allergen friendly and easy to make. While the Vanilla Cupcake Mix is perhaps my favorite of their products, I realized that the Red Velvet Cupcakes were the perfect treat to make for Valentine’s Day. Kristopher (my gluten-eating boyfriend) gave his official stamp of approval.

The banana bread was also a huge hit among both my gluten-free and gluten-eating friends and makes an excellent brunch party option.

A fun bonus – several of the products contain extra materials to help you complete your baking project. The red velvet and vanilla cupcakes contain separate frosting packages (also sprinkles for the vanilla cupcakes!), and the chocolate cake contains extra chocolate buttons. The icing is sweet, so you can easily use a small amount on each cupcake, but if you’re a frosting fiend like me, you might want to have an extra batch handy.

All in all, I highly recommend YesYouCan mixes. I’ll guarantee that you and both your gluten-free and gluten-eating friends will be impressed. No one will guess it is missing the gluten.
