Gluten Free Artisanal Bread Recipe

I haven’t eaten bread like this in years! I’m so proud of this recipe. Imagine being transported to an Italian restaurant, and a giant basket of freshly made bread is brought to the table. Fluffy inside, yet the crust has the perfect amount of crunchiness/chewiness/toughness. It’s difficult to describe just how magical this bread is, so you should definitely make it and experience it for yourself!

This recipe has now been tested by a professional pastry chef (two thumbs up!). Other friends with celiac disease have also taste tested batches made in my kitchen, and the reviews are wonderful. Perhaps my favorite review was from my husband, who is the most indecisive taste tester in history (everything is “good”, so no final decision is ever made). But when he tried this bread he paused and said, “this is extraordinary.”

Tasty Meditation’s Gluten Free Artisanal Bread

Note: this recipe utilizes a food thermometer, digital kitchen scale, and 2 quart Dutch oven with lid. Prep, rising and cook time equal to about 4 hours and 15 minutes.

  • 215g warm water (110-120 degrees F – use a food thermometer to measure)
  • 10g sugar
  • 8g active dry yeast
  • 80g potato starch
  • 50g quinoa flour
  • 50g tapioca starch
  • 30g millet flour
  • 7g psyllium husk
  • 7g salt
  • 15g olive oil
  • 7g apple cider vinegar
  • Brown rice flour (for dusting)
  • 1 tbsp olive oil
  • 1 tbsp water
  • 4 medium-sized ice cubes

1. Combine the water, sugar, and yeast in a small mixing bowl. Set aside for at least 10 minutes, until the yeast rises.

2. Combine all dry ingredients in a separate bowl.

3. Add the olive oil and apple cider vinegar to the yeast mixture. Add the dry ingredients and stir thoroughly. The dough will look fairly wet, like cake batter. Place bowl in a warm place and cover with a slightly damp paper towel (the paper towel should be supported by the bowl so it is not touching the dough at the beginning). Let rise for 1 hour.

4. Dust a piece of square parchment paper with brown rice flour. Transfer the dough onto the parchment and sprinkle a little more brown rice flour on top to make the dough easier to work with (it will be sticky – do not add too much extra flour). Fold the dough into itself 3-4 times. Gently mold the dough into a circular bread shape. Transfer both the parchment and dough into the bowl. Let rise for 1 hour.

5. Meanwhile, 15 minutes into the second rise, place a small Dutch oven on the middle rack in the oven. Preheat the oven (with the Dutch oven inside) to 470 degrees F. Once you turn the oven on, set a timer for 45 minutes.

6. Remove the parchment and dough from the bowl and place both on a second piece of parchment paper (you will have two sheets of parchment on top of each other). If the dough spreads out, gently push the dough back towards center. The dough will feel sticky/wet.

7. Trim the parchment paper. The layer with direct contact to the dough should be trimmed fairly close to the dough. The bottom parchment layer should be cut into a wide oval with an extra two inches on the top/bottom and longer sides to the left and right (you’ll use these as handles when transferring the dough/bread).

8. Combine a tablespoon of olive oil and water in a small bowl. Repeatedly dip your fingers into the liquid and gently coat the top and sides of the dough with the liquid (you will not use the entire amount). Use a knife to score the top of the bread at least twice, cutting nearly down to the bottom of the dough.

9. Using the ends of the parchment paper as handles, carefully transfer the parchment and dough to the Dutch oven. Places four ice cubes around the dough, between the parchment and wall of the Dutch oven. Cover and bake for 40 minutes.

10. Remove the cover of the Dutch oven and bake for an additional 15-20 minutes (the slightly shorter time will yield a slightly softer/chewier crust, longer will have a crunchier crust)

11. Using the parchment paper like handles, remove the bread from the Dutch oven and let cool on a rack for 1 hour before slicing.

This bread is best the day-of but can be frozen and toasted for the future.

• Senza Gluten Cafe & Bakery – This bakery holds a very special place in my heart. My favorite items include panini bread, burger buns, almond ricotta orange cake, lemon mascarpone almond muffins, shortbread cookies, and pecan snowball cookies. After years of visiting this bakery, I recently tried the cookies for the first time. Normally when I visit in person I opt for the pastries, but wow was I missing out! Their cookies are truly magical.

• Modern Bread & Bagel – You’re not dreaming, these are real New York style bagels! When I was diagnosed with celiac disease I never thought I would experience this joy again. Infinitely grateful to Modern Bread for making this magic happen.

• Meredith’s Bread – A family-run bakery located in Kingston, NY, Meredith’s Bread is well known for selling products at farmers markets around NYC. They have two lines of products (wheat-based and gluten free – look for that GF label!), and their gluten free baked goods are made in a separate/dedicated facility. Excellent pricing. I love their rustic farmhouse breads, black and white cookies, and biscotti.

• Izzi B’s Allergen Free Bakery – So many free-from statements! This bakery is free of gluten, wheat, soy, dairy, eggs, nuts, casein, preservatives, trans-fats, refined sugar, and more! Located in Connecticut. Try the yellow cake, it’s my favorite!

• Everybody Eats – Mention Everybody Eats to a gluten free New Yorker, and they’ll immediately start talking about how kind and wonderful the owner, Pedro, is. Check out their instagram for delightful videos of Pedro singing in his bakery, and you might spot a certain special guest (spoiler alert – it’s me!). Highly recommend their gluten free baguette.

• Mariposa Baking Co – Located in San Francisco, so shipping rates are more affordable for friends on the west coast. I highly recommend their cinnamon rolls and flaky pastries. One of the few bakeries I’ve found that makes gluten free croissants!

• The Karma Baker – 100% vegan and gluten free in LA. I highly recommend their donuts.

For the bar:

• Tito’s Vodka – Certified gluten free, corn-based vodka. You might want to get some for yourself, too. I’ve found that you save more money in the long run if you buy the bigger bottle (wink).

• Barr Hill Gin – Lightly sweetened with local honey, so every batch is a little different. Labeled gluten free.

• Deep Eddy Vodka – Flavored vodka that’s labeled gluten free. Cranberry, peach, grapefruit, lemon, lime, orange, and sweet tea flavors.

• Bright Cellars – (referral link) A fun subscription box with wine tailored to your preferences. Each box comes with fun cards to help you learn about the wine you receive. The more you rate your wines, the more the algorithm learns about what you love.

• Wolffer rose cider – Our favorite cider in the Tasty Meditation kitchen, and naturally gluten free!

• Pallini Limoncello – A taste of Italy! Kris and I tried various different limoncello brands during our gluten free honeymoon in Rome, and this was by far our favorite.

I love, love, love Gluten Free Prairie. The taste, quality, safety, the awesome owner – Gluten Free Prairie is the way to go if you’re an oat lover. The brownie mix is amazing! I especially love using the all purpose flour and pancake/waffle mix to make crepes. I recently attempted to make pancakes using the suggested recipe on the back of the pancake/waffle mix. My current nonstick pan is slightly warped (aka it’s no longer perfectly flat), so the pancake batter spread out a bit too much (yay more crepes!). Easy fix if you’ve got a similar uneven pan – decrease the amount of milk and add 1/4 tsp xanthan gum. Perfect pancakes! Also, as an oatmeal lover in my pre-celiac days, I am so happy to now have a gluten free oatmeal that I can finally trust.

Namaste graciously sent me a few mixes to try. The Spice Cake and Pizza mixes were calling to me. First, I made carrot cake cupcakes with cream cheese frosting. The spice cake was bursting with flavorful spices. I imagine it would make an excellent pumpkin cake, as well. Incredibly easy – combine the recommended ingredients along with a handful of chopped carrots and raisins. Lesser quality mixes come out rather gummy, but not Namaste – fabulous texture. The pizza crust was also easy to make and came out wonderfully chewy. Kris (a gluten eater) gave his approval. 

Mixes are easy and convenient, but I also really enjoy baking from scratch. I recently made pizza dough (yes, more pizza) and used a variety of gluten free flours including Namaste’s quinoa flour, which is super high in nutrients. So far I’m loving their high quality mixes and flours, and I will certainly be back for more.

Whenever newly diagnosed celiacs express struggles with finding good gluten free bread I immediately recommend Bread SRSLY. They are the masters of shipping across the country. The bread arrives fresh and can be refrigerated for several days. The really special thing – I’ve found that I don’t need to toast the bread for the first few days! It’s incredibly soft. A few days in I’ll start lightly toasting until it’s soft and warm. There’s no need to toast to the point of crunchy (unless you want to, of course). My favorite holiday tradition as a child was making a gingerbread house with my sister – it was a three day project, and the entire kitchen was covered in sugar. We haven’t spent Christmas together since I moved away from home, and I haven’t tackled a gluten free gingerbread house from scratch yet. Everything in the box was perfect – included were sturdy pieces of gingerbread for the house, a few gingerbread people (and a reindeer!), a piping bag of powdered sugar (just add water), and candy/chocolate to decorate with. Making this gingerbread house was so much fun! I didn’t realize how much I missed this tradition. My heart swelled we pieced it together and made this tiny home. I love, love, love this kit, and I’m so glad that Izzi B’s Bakery is here to help other children (and adults!) share that joy.
